Bia’s Brazilian Raindrop Cake
INGREDIENTS ∙ 250g plain flour (approx. 2 cups) ∙ 100g caster sugar (approx. ½ cup) ∙ 2 medium eggs ∙ 150ml whole milk ∙ 1 tablespoon baking powder ∙ 2 ripe bananas, finely chopped ∙ Vegetable oil (for deep frying)
TO COAT ∙ Caster sugar mixed with ground cinnamon (to taste)
METHOD ∙ Mix flour, sugar, eggs, milk, and baking powder until smooth ∙ Gently fold in the chopped bananas ∙ Heat oil in a deep pan to around 180°C ∙ Drop spoonfuls of batter into hot oil ∙ Fry until golden brown and fluffy inside ∙ Drain on kitchen paper and coat with cinnamon sugar while warm ∙ Serve hot – perfect on their own or dipped in chocolate sauce.
